Opened in 1996, the award-winning restaurant on the third floor of the hotel has garnered a reputation for serving some of the finest Cantonese dishes in town.
In the capable hands of Hong Kong Executive Chef Ku Keung, well-loved, classic Cantonese dishes like the Half Lobster Crispy Egg Noodle with Signature Ginger, Scallion and Egg Sauce are elevated with contemporary touches. Served with stewed half lobster, the noodle is shaped into a ball and deep-fried before an egg-based sauce that’s enriched with seafood broth and perfumed with ginger and scallion is poured over it.
Chef Ku’s signature London Duck Pancake Roll features Silver Hill Duck from Ireland which boasts the perfect fat-to-meat ratio to yield roasted duck meat that is moist and juicy.
Also not to be missed are his nourishing double-boiled soups such as Double-boiled Kami Sakura Chicken Soup with Conpoy, Cordyceps Flower and Bamboo Pith, and Double-boiled Cordyceps Militaris in Young Coconut.
Dim sum lovers can indulge in traditional dim sum items, served alongside novel creations like Kurobuta Pork Spring Roll served with handmade signature XO sauce, “Szechuan” Ma La Pork Dumpling, Squid Ink Prawn Dumpling and Crispy Filo Roll filled with Mushroom.
