Vietnamese cuisine is influenced by China (stir-fries and noodle-based dishes), its French colonial past (banh mi, bo luc lac, iced coffee, pate, crème caramel) as well as its neighbouring countries of Laos, Cambodia and Thailand.

Rice is an essential part of the Vietnamese diet and can take the form of steamed rice, various rice noodles and rice paper for making spring rolls. Another staple is fish sauce (nuoc mam) which forms the basis of all dips and dressings. You’ll also find fresh herbs and vegetables in (or served with) almost every Vietnamese dish.
